Vegan Chocolate Chip Cookies

Tonight I tried a recipe for these really good vegan, chocolate chip cookies. They turned out much better then expected. Here is the recipe! Enjoy 🙂

Vegan Chocolate Chip Cookies:

Ingredients:

  • 1 cup flour
  • .5 cup oats
  • .5 tsp baking soda
  • 2 Tbsp peanut butter (crunchy or normal)
  • .25 cup vegetable oil
  • 3 Tbsp warm water
  • 2 Tbsp ground flax seed
  • 1 tsp vanilla extract
  • .33 cup brown sugar
  • .33 cup granulated sugar
  • .5 cup vegan bittersweet chocolate chips
  • .33 cup sliced almonds

Directions:

  1. Preheat oven to 350 degrees. In medium bowl mix together flour, oats & baking soda.

2. In a large bowl stir together the sugars, peanut butter, water, oil, ground flax seed, and extract.

3. Add flour mixture to wet mixture and mix well. Add in chocolate chips and almonds. Stir well!

4. Form dough into tablespoon sized balls. Place on pan and press down a little.

5. Place in pre-heated oven and bake for 12 minutes!

Vegan Banana Pancakes

Today I made some awesome vegan pancakes for lunch (yes, lunch). This is the first REAL vegan recipe I have tried and it was super easy and delicious.

Banana Pancakes:

Ingredients:

  • 1.5 cup of Almond Milk (or other milk alternative)
  • 2 tsp Apple Cider Vinegar (Optional, I ended up not using any)
  • 1 tbsp Ground Flax Seed
  • 1.5 cup Flour
  • 3.5 tsp Baking Powder
  • 2 tbsp Sugar
  • .5 tsp Salt
  • 3.5 tbsp Coconut Oil (Can be substituted for other natural oil)
  • .5 tsp Vanilla Extract
  • Nuts & Syrup

Directions:

  1. Whisk together milk, flax seed and vinegar in small cup/bowlImage
  2. In a larger bowl, mix together: flour, baking powder, sugar and salt.Image
  3. Add milk mixture to flour mixture.
  4. Image
  5. Add in the coconut oil (melted), and extract. Mix well. The batter with be pretty lumpy and thick!
  6. Add in mashed banana.

  8. Mix together.
  9. Heat up a pan and plop (literately because it is so thick…) the batter on to get these baby’s cooking. You know what to do from here. Flip, flip, flip.
